Apple Cinnamon Muffins

Ingredients

  • 5 apples, cored and diced
  • 3 Tbsp sugar
  • 2 tsp cinnamon
  • 3 c. flour
  • 1 ½ c sugar (if you like it sweeter you can add extra ½ c)
  • 3 tsp baking powder
  • 1 tsp salt
  • 4 flaxseed eggs
  • 1 c. oil (we like macadamia)
  • ½ c orange juice
  • 1c – 1½ c milkadamia, lightly sweetened original
  • 2 ½ tsp vanilla
  • ½ c oats or muesli
  • Cinnamon sugar for sprinkling

Directions

  1. Mix apples, sugar, and cinnamon. Set aside.
  2. In a large mixing bowl, combine wet ingredients. Fold in apples.
  3. The batter should be fairly thick, but if too thick add in more milk.
  4. The batter will be thick.
  5. Grease and flour a 10-inch tube pan Add half the batter to the pan.
  6. Spoon into muffin tin. Sprinkle oat and cinnamon sugar on top
  7. Bake at 350F for 25-30 minutes.
