Apple Cinnamon Muffins

Ingredients
- 5 apples, cored and diced
- 3 Tbsp. sugar
- 2 tsp. cinnamon
- 3 c. flour
- 1 ½ c. sugar (if you like it sweeter you can add extra ½ c)
- 3 tsp. baking powder
- 1 tsp. salt
- 4 flaxseed eggs
- 1 c. oil (we like macadamia)
- ½ c. orange juice
- 1c – 1½ c. milkadamia Creamy
- 2 ½ tsp. vanilla
- ½ c. oats or muesli
- Cinnamon sugar for sprinkling
Directions
- Mix apples, sugar, and cinnamon. Set aside.
- In a large mixing bowl, combine wet ingredients. Fold in apples.
- The batter should be fairly thick, but if too thick add in more milk.
- The batter will be thick.
- Grease and flour a 10-inch tube pan Add half the batter to the pan.
- Spoon into muffin tin. Sprinkle oat and cinnamon sugar on top
- Bake at 350F for 25-30 minutes.
