Shakshouka

Ingredients

  • 2 tbsp macadamia oil
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 1 eggplant, diced
  • 1 medium onion, diced finely
  • 2 14 oz cans chopped, skinned tomatoes
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp harissa
  • 6 tsp ground sumac
  • 6 tsp salt
  • 6oz soft tofu
  • 1/2 tsp turmeric
  • 3 Tbsp chopped parsley

Directions

  1. Heat oil in a large pan, on medium heat. Add garlic and briefly saute.
  2. Stir in chopped onion and eggplant until both becomes softened; add in red pepper and saute
  3. another 5 mins.
  4. Add tomatoes and mix in spices cumin through salt
  5. Simmer for :15 minutes
  6. Drain tofu, break it up and toss with turmeric. Place seasoned tofu on the sauce.
  7. Garnish with parsley
